I like quinoa as much as the next person, but can we all admit it needs some help in the flavor department? Not so much to cover up the nutty flavor, but enough so that it doesn't taste quite so...healthy. Lime adds just enough zip and flavor to help quinoa blend in to a Tex-Mex or Thai meal. Yields 8 to 10 servings.
- 4 cups water
- 1 big pinch salt
- 2 cups quinoa, any variety
- Zest of 2 limes
- Juice of 4 limes
- In a medium pot, bring the water and salt to a boil, then add the quinoa. Cook for 8 minutes, just until al dente.
- Drain very well and return to the hot pot for a minute. Toss in the lime zest and juice. Mix well and taste for seasoning. Serve hot or at room temperature.
