If your daily yogurt needs a kick, this is just the thing. The sweet-tart pomegranate flavor is refreshing, while the chia seeds add a significant amount of protein, and the pomegranate seeds, fiber. Although the orange flower water is optional, try and find it; it adds a lovely perfume that can make plain yogurt exceptional.
- ¾ cup pomegranate juice
- 4 tablespoons chia seeds
- 1 whole pomegranate
- 1 tablespoon orange flower water (optional)
- Small pinch salt
- Cut the pomegranate in half widthwise. Set a bowl of water in a sink and place a half of the pomegranate in your palm, cut side down. With a wooden spoon, beat the back of the pomegranate so the seeds fall into the water. The seeds will sink while the pith will float. Drain the seeds and pick out any pith.
- Combine all ingredients in a jar and shake vigorously to blend well. Refrigerate overnight to allow the chia seeds to gelatinize.
